Apple, celery and parnsip soup

Ingredients

  • 1 lb cooking apples
  • Water
  • ½ lb plain flour
  • 1 level tsp bicarbonate of soda
  • 1 level tsp cinnamon
  • ½ tsp mixed spice
  • ½ tsp ground ginger
  • 12 oz mixed fruits and nuts
  • 5 oz soft brown sugar
  • 2 eggs
  • 4 oz butter
  • Rind of 1 lemon, finely grated

Instructions

Step 1
Peel, core and slice the apples. Cook in water to pulp then liquidise.

Step 2
Grease and line the two 2 lb loaf tins.

Step 3
Sift flour with bicorbonate of soda and spices. Add fruit.

Step 4
Cream the butter and sugar. Add eggs and lemon rind.

Step 5
Fold in dry ingredients and cooking apple.

Step 6
Place in tins. Dredge the top with sugar.

Step 7
Bake in the oven at 170℃ / gas 3 / 325℉ for 1½ hours.
