Apple, celery and parnsip soup

Ingredients

  • 1 lb lean belly pork (skinned and diced)
  • 1 lb potatoes (thinly sliced)
  • 1 onion (chopped)
  • 1 large Bramley apple (peeled and chopped)
  • 5 tsp water
  • 1 red oxo
  • ½ tsp dried sage
  • 1oz butter
  • Salt, pepper and oil

Instructions

Step 1
Fry the onions in a little oil until golden brown. Remove from pan and place in an ovenproof casserole.

Step 2
Fry the pork until well browned on all sides and add to the casserole.

Step 3
Put the apples, seasoning, herbs, crumbled oxo and water into the casserole..

Step 4
Overlap the sliced potatoes on top of the pork and dot with butter.

Step 5
Bake in the oven at 180℃ / gas 7 / 350℉ for 1½ hours.
