Paupers Pork by Women's Institute
Ingredients
- 1 lb lean belly pork (skinned and diced)
- 1 lb potatoes (thinly sliced)
- 1 onion (chopped)
- 1 large Bramley apple (peeled and chopped)
- 5 tsp water
- 1 red oxo
- ½ tsp dried sage
- 1oz butter
- Salt, pepper and oil
Instructions
Step 1
Fry the onions in a little oil until golden brown. Remove from pan and place in an ovenproof casserole.
Step 2
Fry the pork until well browned on all sides and add to the casserole.
Step 3
Put the apples, seasoning, herbs, crumbled oxo and water into the casserole..
Step 4
Overlap the sliced potatoes on top of the pork and dot with butter.
Step 5
Bake in the oven at 180℃ / gas 7 / 350℉ for 1½ hours.
